balter is a Contemporary West Indian Kitchen located in the heart of Christiansted on the corner of Company & Queen Cross Streets. With fresh, locally sourced ingredients, creatively composed by award-winning chef Digby Stridiron, one-of-a-kind cocktails & wines selected by Sommelier Patrick Kralik, and unparalleled service, balter is the new standard when it comes to Crucian hospitality.
A native of St. Croix, Chef Digby draws much of his culinary inspiration from the environment around him. After gaining experience at multiple restaurants throughout the U.S., Chef Digby returned to his home, where he has been serving as the Culinary Ambassador of the US Virgin Islands. Chef Digby uses local recipes and forages seasonal ingredients from the mangroves, ocean beds, and the rainforest to bring you this Contemporary West Indian Cuisine.
Patrick Kralik, Owner & General Manager, hopes to foster a culinary experience unlike any other here on St. Croix. His unique concept of “Farm to Glass” cocktails utilizes seasonal fruits and vegetables from around the Virgin Islands to create one-of-a-kind signature cocktails. With an extensive wine list of more than 145 wines, guests can utilize Patrick’s Sommelier knowledge to choose the perfect bottle to complement their meal.
Housed in a newly renovated, historic Danish building, the old-world charm of the structure is offset with bright, modern elements to give the space an eclectic feel. balter’s dining room is open Tuesday-Saturday from 6 -10 pm, with the bar open from 4 – 11pm. Sunday brunch is served from 11am-4pm, bar open until 6pm. Come dine at balter, where you come in as a stranger, eat & drink as a friend, and leave feeling like family!
