Cibone

CiboneGreg Richards owns and operates the new Cibone Restaurant in Frederiksted along with his wife, Almitra, and two sons, Ahmad and Ahmil. Born in Puerto Rico, but raised in La Grange, Frederiksted, he left St. Croix after high school for the Air Force and then to study Management at Embry Riddle Aeronautical University.
“My parents exposed my brothers and I to all aspects of life including fine dining. It’s been a dream of mine since my teenage years to own my own restaurant. Living within walking distance of it now, I want to continue to do what I can to enhance the nightlife in Frederiksted,” Greg says. “Being involved in business management for the last 17 years and previously owning Mahogany by the Sea restaurant, I feel like I am ready to take on this new venture.”
A native son born on St. Croix, Chef and part owner Lamar Bough studied and worked in the restaurant industry in the Maryland area, gaining great exposure from top chefs. He was a head sous chef at Renaissance Carambola Resort before coming to Cibone.
Greg describes his menu as “eclectic, French, Mediterranean, and ‘Crucian Fusion.’ It changes daily, based on what the market has in fresh produce, meats or seafood. Farm-to-table, and fresh, wild-caught fish-to-table! We are also “Reef Responsible.” (see story Pg 46).
Located in the old Limetree Courtyard on King Street, Cibone is open Monday, Wednesday, Friday, and Saturday for Dinner, 6 – 10 pm; Friday and Saturday, Tapas and live jazz, 10 pm – midnight. Greg, who is an Environmental Planner at the Department of Planning and Natural Resources during the day, plans future Cibone Wine Pairings, Craft Cocktail Guest Artists (like the one coming up in June for Rotary East), catering, take out, parties, and exclusive events.
